Lavender London Fog (Earl Grey Tea Latte) – Leels Cooks


I keep talking about these on instagram, along with drinking way too many lately, so I figured I’d just post about them!

While I have seen a few variants nearby, they’re a lesser known thing around here in NC. Said to have originated in Vancouver BC (my hometown!)  They’re just a sweetened earl grey tea latte, and a popular variant is with the addition of lavender.

Some recipes for this call for vanilla extract but since most extract is flavored alcohol I don’t enjoy it in drinks. If you have vanilla coffee syrup like Torani makes, that’s a much better substitute.

These are super easy to make, you can swap to plant based milks as well, keeping in mind the fattier the milk, the easier it will foam. I’m not well rehearsed on foaming plant milk but I have had success making foam with unsweetened almond breeze brand.

This makes enough for two!

What you need:

  • 2 cups, just boiled water
  • 2 earl grey tea bags (get good tea!)
  • 1-2 tbsp honey or your favourite sweetener
  • 1 cup whole milk, heated
  • 1/2 tsp lavender flowers
  1. Place tea bags into cups and divide water between, allow to steep for 4-6 minutes. Stir in honey.
  2. In a heat proof container or pot, add milk and lavender. Heat up milk to just scalding either on the stove or microwave, and let sit a minute or two. Strain into a cup or container to remove flowers. If you have a fancy automatic milk frother/steamer just use that to make your foam. I use one of the cheap handheld milk frothers with the round whisk on the bottom. I try to go for a dryer foam, closer to a cappuccino but not quite. This will double in volume depending on how much you foam so consider that before you start!
  3. Once your milk is ready, gently divide between the two cups and enjoy!

You can garnish with additional lavender like I have but it’s really just for the look and most people don’t like sipping on flower bits. If you’re not into floral flavours, feel free to leave it out entirely.
