Boxing day always seems to be a bit of a weird one food wise. After the Christmas Day feast anything else that’s served up seems to pale in comparison.

And whilst boxing day buffets of cold meats, cheeses and bubble and squeak is all very well, it can get a bit boring!

Boxing Day Dinner – Leftover Turkey Curry

Let’s start with a boxing day dinner that is going to be an absolute crowd pleaser! Not only is this easy curry recipe great for using up any leftover turkey that you might have after Christmas Day, it’s a 30 Minute Meal, so on the table super fast.

And we’ve kept the spice levels low so that it’s suitable for the whole family!

Boxing Day Dinner – Leftover Turkey, Cranberry & Brie Pie

If you haven’t made a Christmas Pie before, then you need to try my turkey, cranberry and brie version! I think this has to be one of my favourite Boxing Day Meals.

Ready made puff pastry takes all the faff out of this pie recipe and uses up leftover veggies as well as turkey. On the table in 25 minutes too! What’s not to love?

You might not think of bangers and mash as a traditional boxing day meal, but if you’ve got leftover mashed potato, then this recipe is going to help you use up that mash. And make a pretty awesome family dinner with not a lot of effort.

Boxing Day Dinner – Leftover Turkey & Ham Pasta

If pies or curry aren’t your thing, then try this leftover turkey pasta instead! If like me, you normally have both turkey and ham over Christmas, then this recipe is great for using up those leftovers on boxing day.

Regular followers will know that I absolutely love a One Pot Recipe and this one pot pasta is no exception.

Boxing Day Dinner – Parmesan Bread Pudding With Broccoli and Ham

One of the things I love about Boxing Day food is that you can come up with lots of new flavour combinations and meal ideas by just using up whatever Christmas leftovers you have.

This savoury bread pudding is a prime example! Not only can you use up leftover Christmas Ham, chuck in whatever veg that you have AND get rid of any bread that is nearing it’s end.

Boxing Day Dinner – One Pot Spaghetti Carbonara

For the last couple of years, one of my favourite Christmas Recipes is this Christmas Ham in Coke. In the unlikely event that you have any leftovers, then you can use them in this one pot pasta recipe.

Simply swap out the bacon lardons for the same amount of leftover ham and you have a really flavourful but super easy spaghetti carbonara.

If you are just having a chilled day at home on the days following Christmas, then this leftover toastie made in the air fryer is ideal.

I first made this toastie last year after I did this Air Fryer Turkey Crown as it set me thinking what other things I could make in it.

Serve up this Leftovers Toastie with a side of crisps for a low fuss but super comforting boxing day lunch.

Boxing Day Lunch Idea – Bubble & Squeak Fritters

Bubble and Squeak has long been a traditional British Boxing Day food! But rather than making one large dish, make these individual fritters and serve with a poached or fried egg on top.

So much nicer and more appealing to kids than a plate of reheated leftover veggies and meat!

Boxing Day Lunch Idea – Leftover Mashed Potato, Ham & Cheese Muffins

This boxing day recipe completely re-invents your Christmas leftovers! The combination of leftover christmas ham, mash and cheese really works.

If you made the Ham In Coke at Christmas, chances are that you won’t have any leftover ham, so you can always use packet ham for this recipe.
